Flor Malvés is a white Malvasía wine that is
the result of years of research and work, the
first of a new collection that we have called
Vinos Ancestrales (Ancestral Wines). In this
wine we have tried to recreate the dry white
wines that were made in the past, adapting
them to our times but being as faithful as
possible to the ancestral way of making them,
which in a way we have had to rediscover.
In the past, the grapes were trodden with the
feet and the first must “flor” (without
pressing) was used to make the dry white
wine, as sweet wines were made from the
presses and the musts with more skins. Once
fermentation was finished, they were stored
underground in the wine vats and sealed until
they were ready for consumption. To avoid
oxidation, they were kept with a large
proportion of lees. In Flor Malvés we have
emulated all these procedures with our
current knowledge.
The result is a dry white wine, with
predominant aromas from this ageing on lees
(pastry, pastries, a touch of apple pie),
very similar to the aromas we find in
sparkling wines aged in the bottle using the
traditional method. On the palate it is a
wine with great volume and very dry, with
enormous gastronomic potential. It is a very
distinctive wine that definitely links us to
our origins and brings them up to date.
GRAPE: 100% Malvasia
VINEYARD: Malvasia vines located
on mineral soil with high
salinity, at an altitude of 500
metres above sea level. Vineyard
managed with traditional
viticulture and minimizing the
treatments on the vine with the
ecological standards.
VINTAGE: In 2020, the grapes
ripened slowly, with fairly
moderate temperatures at the end
of the summer, which allowed us
to harvest the grapes at their
optimum ripeness.
VINIFICATION: Harvested by hand
at the beginning of September,
the grapes were kept for 7 days
in a chamber at 1oC and then
pressed directly with a vertical
press, extracting only the first
must for this wine. It was
fermented for 12 days at 15oC
temperature. It was then stored
on its own lees in tanks for 9
months. It was bottled in August
2021.

strength: 12 %vol. Total
acidity: 6,09 g/L. pH: 3,21.
Residual sugar: 0,84 g/L. Total
sulphur: 94 mg/L.

Alicante Designated Protection
of Origin Regulatory Board.
WINEMAKER: Joan Guia

of 75 cl. were bottled in June
2021.
Flor Malvés is a very dry white
wine with a silky mouthfeel that
makes it a very gastronomic wine.
VISUAL: It has a pale colour, but
with a golden hue and a density
that can be perceived when
swirling the glass lightly.
