VI DE SAL

The VI de Sal is a unique wine from which we can only obtain a few bottles and not every year. It is the result of a vineyard on very special terroir near the Salinas Lagoon and of specific climatic characteristics that have to be fulfilled. The soil has very high salinity and the vines live at the limit, especially at the end of the ripening. There comes a moment when the vine, already heavily affected by water stress, is fed from the grape’s own juice for its survival. Within a few days the grapes lose sufficient water and, as a result, produces a very rapid concentration of the grape without reaching over-maturity. It is at this point that we harvest. However, to be able to vinify Vi de Sal the skins and pips should be at their optimum state of maturity.

These special and concentrated grapes are vinified in 600L open barrels slowly and with little intervention. Once this process is completed, the wine is drained and aged in 700L barrels for one year. VI de Sal is also a wine with minimal intervention in all respects, and only a small level of sulfites is added to the bottling.

The VI de Sal is a premium wine that highlights everything that can represent a wine from Alicante in the Vinalopó area. Its scant production makes it a very difficult wine to find. It is marketed with a difference of three to four years between the year of sale and its vintage.  Its optimum time of consumption varies between four and ten years after harvest.

GRAPE: 100% Monastrell

VINEYARD: Monastrell vineyard over 40 years old bordering the Salinas Lagoon. On clay-free soil of high salinity. Low goblet, strict rainfed only with a production limited to 1Kg per vine.

VINTAGE: 2016 was an excellent year, with a period of ripening with little rainfall. The old vineyards of Monastrell showed their full potential thanks to their deep roots. The result was a very expressive wine with a concentration and exceptional polyphenolic maturity.

ELABORATION: Hand-picked in October 2016, it was macerated for 25 days in open 600 L barrels, with very soft pump downs. At the end of malolactic fermentation, the wine was racked to the new 700L French oak barrels. The ageing lasted 12 months. 812 1.5L magnums were bottled in June 2018.

CHEMICAL ANALYSIS: Alcoholic strength: 15% vol. Total acidity: 5,8 g/L. pH: 3,4. Residual sugar: 2,0 g/l. Total sulphur: 46 mg/l. Total polyphenols: 69.

VI de Sal is a wine that is the fruit of the natural concentration of its grapes, a characteristic that provides it with an impressive balance between the alcoholic strength, its high acidity and the concentration of flavour and aromas, with a very respectful ageing.

VISUAL: Color is of an extraordinary intensity and strength.

NOSE: In the nose, it is a hugely concentrated wine of fruit that gradually opens to its splendour in a few hours.  It is recommended to decant or open beforehand.

MOUTH: In the mouth it has an extremely powerful and yet silky entry and a very tasty pass that is amplified on the palate, where it melts into an unimaginable balance for a wine of this power. A very long finish, with hints of ageing, although the highlights are its concentrated red fruit, a balsamic touch and a very pleasant sensation that continues with time.
